Ingredients
- 1/2 lb pasta (I used rotini)
- 1 teaspoon olive oil
- 2 large boneless, skinless chicken breasts
- salt and pepper to taste
- 5 tablespoons butter
- 5 tablespoons all-purpose flour
- 3 garlic cloves, minced
- 3 cups of milk
- 3/4 cup grated cheddar cheese
- 3/4 cup grated parmesan
Instructions
- Preheat the oven to 400˚F. Lightly grease a 9×13 baking dish.
- In a medium saucepan, boil the pasta until al dente. Put aside.
- Meanwhile, on a frying pan, heat the olive oil. Season the chicken with salt and pepper and cook until the inside is no longer pink. Remove from pan and cut into small pieces. Put aside.
- In a medium saucepan, melt the butter. Add the flour and garlic and mix for about 1 minute. Gradually add the milk, whisking constantly. Simmer the sauce, whisking constantly, until the sauce thickens.
- Remove the pan from the heat and stir in the cheeses.
- Add the pasta and chicken to the pan and season with salt and pepper.
- Pour the mixture into the prepared baking dish and bake in the preheated oven for 25 minutes, or until the top is golden and bubbling. Let stand for a few minutes before serving.
