Broccoli Cheese Stuffed Chicken Breast
The broccoli stuffed chicken breast is filled with a simple mixture of broccoli, seared in a pan, and then cooked to perfection.
Broccoli Cheese Stuffed Chicken Breast

INGREDIENTS
- 3 large chicken breasts
- salt pepper
- 1 1/2 teaspoons garlic powder, divided
- 1/4 teaspoon paprika
- 1 cup finely chopped broccoli florets
- 1/2 cup finely diced red bell pepper
- 1 cup sweet cheddar
- 1 tablespoon mayonnaise
- 2 tablespoons olive oil
INSTRUCTIONS
- Preheat the oven to 425 degrees F.
- Season both sides of the chicken breasts with salt, pepper, paprika and 1/2 teaspoon garlic powder. Use a sharp knife to cut a slice in the middle of the chicken breasts, but not all the way, creating a pocket for filling.
- For the garnish, place the broccoli in a microwave-safe dish and add about 2 tablespoons of water. Cover with plastic wrap and microwave for 1 minute. Drain any excess water. In the dish, add the pepper, cheese, mayonnaise, the rest of the garlic powder and salt and pepper to taste. Mix until homogeneous, then divide the mixture between the chicken breasts, using a toothpick to fix if necessary.
- Heat a large ovenproof pan (I prefer to use a cast iron pan) over medium heat and add the olive oil. Sear the chicken for 3 to 4 minutes on each side. Cover the pan with aluminum foil and bake in the preheated oven for 15 to 17 minutes, or until the chicken is 165 degrees. Let stand covered for 5 minutes before tasting.
