Breakfast Bacon Gravy (Country Gravy)
We do not eat bacon often, but bacon is one of my favorite ways to eat it. When I first married, I did not know if you could make gravy with bacon instead of sausages.
Ingredients
- 1 pound bacon
- 1/2 teaspoon pepper
- 2 cups milk
- 4 tablespoons bacon fat
- 4 tablespoons flour
- salt to taste
Instructions
- Cut the bacon into 1/2 inch pieces.
- Bacon brown in a large skillet over medium heat, about 15 minutes, remove with skimmer and set aside.
- Measure the fat residue from the bacon then add 4 tablespoons to the pan. (See note below)
- Place the flour in the pan over medium to medium heat and allow to boil for about 1 minute until it becomes bubbles. Add the milk and leave the mixture thickening, whisking constantly, about 5 minutes. Reduce heat to medium and add bacon again, add salt and pepper as desired. Service immediately.
