Breakfast Bacon Gravy (Country Gravy)

We do not eat bacon often, but bacon is one of my favorite ways to eat it. When I first married, I did not know if you could make gravy with bacon instead of sausages.

Ingredients

  • 1 pound bacon
  • 1/2 teaspoon pepper
  • 2 cups milk
  • 4 tablespoons bacon fat
  • 4 tablespoons flour
  • salt to taste

Instructions

  1. Cut the bacon into 1/2 inch pieces.
  2. Bacon brown in a large skillet over medium heat, about 15 minutes, remove with skimmer and set aside.
  3. Measure the fat residue from the bacon then add 4 tablespoons to the pan. (See note below)
  4. Place the flour in the pan over medium to medium heat and allow to boil for about 1 minute until it becomes bubbles. Add the milk and leave the mixture thickening, whisking constantly, about 5 minutes. Reduce heat to medium and add bacon again, add salt and pepper as desired. Service immediately.
