Ingredients


CAJUN CREAM SAUCE



  • 1 teaspoon red pepper flakes

  • 1 teaspoon cajun seasoning

  • 1/2 teaspoon kosher salt

  • 1/4 teaspoon ground black pepper

  • 2 cups heavy cream

  • 1 cup chicken broth

  • 1 tablespoon cornstarch

  • 1 cup grated Parmesan cheese

CRISPY CHICKEN WITH PARMESAN



  • 4 butterfly chicken breasts

  • 1/4 cup flour

  • 1 cup breadcrumbs

  • 1/2 cup grated parmesan

  • 1/2 teaspoon kosher salt

  • 1/4 teaspoon ground black pepper

  • 2 eggs

  • 4 tablespoons vegetable oil

PASTA



  • 1 lb Farfalle pasta

  • 2 tablespoons butter

  • 1/2 sliced ​​yellow pepper

  • 1/2 sliced ​​red pepper

  • 1/2 sliced ​​red onion

  • 8 ounces crimini mushrooms, sliced

  • 1 tablespoon minced garlic

  • 1/4 cup parsley for garnish (optional)

Instructions



  • Mix the ingredients for the sauce and set aside.

  • Boil a large pot of water and cook the pasta one minute before what is on the box.

  • Drain but do not rinse.

  • Combine flour, breadcrumbs, Parmesan, kosher salt and black pepper in a bowl.

  • In a second bowl, whisk the eggs.

  • Dredge each piece of chicken in the breadcrumb mixture, then in the eggs, and finally in the breadcrumb mixture. *

  • Let the chicken sit on a tray while you cook the vegetables.

  • Melt the butter in a cast iron skillet over medium heat and add the peppers, onion, garlic and mushrooms.

  • Cook 3 to 5 minutes until it starts to brown but not to decompose.

  • Remove the vegetables from the pan.

  • Add 1/4 cup oil and cook the chicken until crisp and golden, 3 to 5 minutes per side.

  • Remove the chicken from the pan and drain the oil.

  • Add the pasta and vegetables to the pan with the sauce mixture.

  • Leave to thicken and stir for 3 to 5 minutes.

  • While the sauce cooks, cut the chicken.

  • Serve the pasta with the sliced ​​chicken on top and additional Parmesan cheese as desired.
