French Onion Chicken Recipe
Pan-fried chicken with caramelized onion sauce in butter and melted cheeses. A simple and tasty 30 minute meal!
French Onion Chicken

Ingredients
- 2 large sweet onions (sliced)
- 4 tablespoons butter
- (1) 14-ounce beef broth
- 4 chicken breasts (uniform size book)
- 2 tablespoons olive oil
- 1-2 teaspoons of salt
- 1 teaspoon of pepper
- 1 teaspoon thyme
- 1 1/2 tablespoon cornstarch (or flour)
- 4 slices of Provolone cheese
- 4 slices of Swiss cheese or mozzarella
- Parsley or herbs for garnish
- 1/2 cup grated Parmesan cheese (optional)
Instructions
- Preheat the oven to 400 degrees. Heat the oven skillet over medium-high heat. Add the butter to the pan and let it melt. Add the sliced onions and stir to coat with butter. Continue to cook, stirring often, for about 15 minutes or until the onions are translucent and softened.
- Meanwhile, sprinkle chicken breasts with olive oil, salt, pepper and thyme. Once the onions are cooked, remove the onions from the pan and set aside. Place the chicken breasts in the pan and cook for 5 minutes on each side.
- Remove the chicken from the pan and place on a plate. Cover with a paper towel to keep warm. Return the onions to the pan and sprinkle the cornstarch or flour over the onions. Stir. Pour the beef broth and use a whisk to stir the mixture and make sure the cornstarch is completely dissolved.
- Once it has thickened, add the chicken to the pan and spoon the sauce over all the chicken. Top a slice of provolone cheese and a slice of Swiss cheese on each chicken breast. Transfer the baking pan to the preheated oven and bake for 8-10 minutes, or until the cheese is melted and the chicken is cooked through.
- Pour the sauce and onions over the chicken. Garnish with parsley or Italian herbs.
